Hello Again!

We’re back! Thanks for your patience.

What better way to return to the world of blogging than with a story of food. Over new years, I decided to purchase for myself a set of Ramekins. A Ramekin, for those of you not in the know, is a small type of ceramic dishware that can be used in the oven. Often custards or puddings are made in Ramekins. My purchase was specifically for Chocolate Fondants. After their initial usage, however, I really wasn’t doing much with my new cooking tools.

Cue Mom D.

I was talking to Mom D about my Ramekins and she helped me realize that my set (which conveniently comes with Tupperware lids) would be perfect for baking pimped out lunches.

Last week, I started the experiment with tiny shepherds pies.

Talk about delicious! Sure, it takes a couple hours on a Sunday to do all the preparation, but the delicious factor is high and it’s worth it not to have to worry about saving leftovers or preparing lunches in the morning before work. Unfortunately, I only have four Ramekins. I should probably purchase a fifth so that I can have a complete work week.

I’m still trying to think up a few more delicious dishes that I could bake and bring with me to work. If you have any recommendations, I’m all ears!

    I think that baked Mac N Cheese with maybe a lil Bacon on it would be grand in a lil Ramekin. Also, I would like to invite you to ditch CT and move to So Dak, where you promptly take up your baking skills, etc. I will frequent your new digs!

    I love ramekins in the kitchen. I think ours are a little smaller than yours but we’re always using them for food prep and deserty things. Somehow applesauce in a ramekin is a million times better than applesauce in a bowl (or pudding, ice cream, etc). We have a set of six and they are constantly in use.

      Yeah, I think mine are uncommonly large. In fact, that recipe for the chocolate fondants is suppose to fill four ramekins.

      For me? it fills 1.

    I use my ramekins all the time for little personal sized dishes. My favorite is miniature mediterranean quiches with a goat cheese crumble on top. I also do souffles, mini apple cherry pies that I freeze for whenever I crave pie a la mode, and of course, creme brulee :D

      Apple pies. oh man. Delicious, though probably not ideal for lunch.

      I bet I could make a good healthy quiche. That’s a solid idea.

        I do my quiche with over 50% vegetables like roasted tomatoes, red peppers, mushrooms, artichoke hearts, and spinach. I only use one yolk per 6 mini quiches. Besides the bit of cheese and crust, its pretty darn healthy and still super duper delicious.

    Shauna makes some sort of Turkey thing with a crumble top that is awesome. and the great thing is, she makes them then freezes them! Whenever we dont want to cook we just toss them straight from Freezer into hot oven and tasty tasty dinner is had mere minutes later! Amazing!

        Italian Pot Pie on MarthaStewart.com. We replace the ground beef with ground turkey. These were actually the first thing we ate at home after bringing the little man home. He Loved them!

    Oh man. That looks delicious. I love old style of shephard’s pie! Chicken pie sounds amazing.
