A pig?

Before I departed for Ukraine, Jess sent me this note

Today I helped my family kill their pig and prepare EVERYTHING for future eating. Earlier they said they were going to kill the pig around the time you were here but the way her menstruation is/was they had to do it now or her blood would be crazy and not edible. Oh well, you are going to get to see lots of stuff anyway.

New years is the biggest holiday and i myself am really excited to see all of the stuff that will happen.

    Pigs are fun when they’re alive, or after they’re butchered. I haven’t butchered a pig, but based on chicken butchering experience, I’m sure it’s no fun at all.

    Having not been present for an actual kill, I can’t comment on that portion. But the rest of the butchering process is actually quite interesting. Anyone who’s read “Little House in the Big Woods” knows that Mary and Laura Ingalls played with a pig’s bladder. Apparently they make good ballons.

    First of all…I’m impressed. How do you read with your eyes closed?

    Second…my comment about it being interesting was from watching one, not from reading about it in the “Little House” books.

    Does anybody else think it’s interesting/bizarre that they schedule the pig-butchering around the pig’s menstrual cycle?

    Actually that makes sense, because hormone levels make a difference in the flavor of the meat.
